Kidamerinks in the Kitchen: Lemon Ice -- "L" Week

Since Summer is on it's way out, I wanted to try one last "cool" treat to go with our "L" week. 

We LOVE Italian Ice, so when I found this recipe I was really excited about it, yet also nervous. I didn't want it to be a "hard" Ice recipe. 

Ya know, the "Sno-Cone" consistency...

All of that nervousness went away as we ate our Lemon Ice. It turned out amazing. The ice was a creamy-melt-in-your-mouth type of ice. Simply Divine!

Here's how you do it:
Ingredients: 
1 3-oz package lemon flavor gelatin
1 cup water
1 cup cold seltzer
1 tbsp lemon zest
2 tbsp lemon juice


Here are the ingredients. Tip: Make sure your seltzer is actually cold! :)

Pour in the Gelatin and 1 cup of Hot Water, Mix until Dissolved.


Then add the COLD Seltzer, and watch it Bubble!


Mix well.


Add some Lemon Zest, and some fresh Lemon Juice. 
(This was my Kidamerink's Favorite Part)


Pour into single serve dishes and FREEZE.


When the Lemon Ice is completely frozen, take out of the Freezer and let it "sit" for a few minutes. Then scrape it up and enjoy!
